Peanut Butter Stir Fry

I made this for my grandparents, who don't eat a lot of "exotic" food but are willing to try new recipes from time to time.

Peanut Sauce:
*Mixture of smooth and crunchy peanut butter
* Lemon juice to taste
* Salt and sugar to taste
* Enough water to make sauce about as thick as a cheese sauce
Stir Fry Ingredients:
*Veggies of choice (I used a yellow squash and zucchini mix)
* Small amount of vegetable oil and/or butter
Rice:
*Minute rice (if using real rice, change cooking times of other ingredients)

Combine peanut sauce ingredients in a saucepan over low heat. Stir continuously and sample periodically, adjusting ingredients as needed. For a spicier sauce, add hot sauce. Turn heat off, and start cooking rice. I used Minute rice, which cooks for 5 minutes in boiling water. Once the Minute rice has been put in the water, start stir-frying the veggies. Serve the veggies over the rice, and pour the sauce over the veggies.
